Ingredients

  • 2 sheets Puff pastry sheets
  • 2 cups Fresh blueberries
  • 0.5 cup Granulated sugar
  • 1 tablespoon Cornstarch
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 1 tablespoon Water
  • 0.25 cup Powdered sugar
  • 1 tablespoon Milk

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a medium-sized saucepan, combine the blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat until the mixture thickens and becomes bubbly, about 5-7 minutes. Stir occasionally and set aside to cool completely.

Step 3

Lightly flour a clean surface and roll out the puff pastry sheets. Cut each sheet into 4 equal squares for a total of 8 squares.

Step 4

Spoon about 2 tablespoons of the cooled blueberry filling onto the center of each pastry square.

Step 5

Fold each square diagonally to form a triangle, then use a fork to press and seal the edges. Make a small slit or poke a few holes on the top of each turnover to allow steam to escape.

Step 6

In a small bowl, whisk together the egg and water to create an egg wash. Brush this over the tops of the turnovers for a golden, shiny finish.

Step 7

Place the turnovers on the prepared baking sheet, leaving space between them. Bake in the preheated oven for 20-25 minutes or until the turnovers are golden brown and puffed up.

Step 8

While the turnovers cool slightly, prepare the glaze by whisking together the powdered sugar and milk in a small bowl until smooth.

Step 9

Drizzle the glaze over the warm turnovers before serving. Serve fresh, warm, or at room temperature!
