Ingredients

  • 1 cup Sweet potato (mashed)
  • 2 cups All-purpose flour
  • 0.75 cup Brown sugar
  • 0.25 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 2 large Eggs
  • 0.5 cup Vegetable oil
  • 0.25 cup Milk
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh blueberries
  • 0.5 tablespoons All-purpose flour (for coating blueberries)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside.

Step 2

In a medium bowl, whisk together the all-purpose flour, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, and salt.

Step 3

In a large bowl, whisk the eggs until combined. Add the mashed sweet potato, vegetable oil, milk, and vanilla extract, and mix until smooth.

Step 4

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.

Step 5

In a small bowl, toss the blueberries with 0.5 tablespoons of flour to prevent them from sinking in the batter. Gently fold the blueberries into the batter.

Step 6

Pour the batter into the prepared loaf pan and spread it evenly with a spatula.

Step 7

Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Step 8

Remove the bread from the oven and allow it to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.

Step 9

Serve warm or at room temperature and enjoy!
