Ingredients

  • 4 large Fresh peaches
  • 2 cups Fresh blueberries
  • 0.75 cup Granulated sugar
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 6 tablespoons Unsalted butter
  • 0.5 cup Whole milk
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Ground cinnamon

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the peaches, remove the pits, and slice them into thin wedges. Combine the peach slices, blueberries, 1/4 cup of granulated sugar, lemon juice, and ground cinnamon in a large mixing bowl. Toss to coat the fruit evenly and set aside.

Step 3

In another mixing bowl, whisk together the flour, remaining 1/2 cup of granulated sugar, baking powder, and salt.

Step 4

Cut the cold unsalted butter into small cubes. Using a pastry cutter or your fingers, work the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 5

Gradually stir in the milk and vanilla extract until the dough comes together into a sticky batter.

Step 6

Transfer the fruit mixture to a 9-inch baking dish or an oven-safe skillet and spread it evenly.

Step 7

Drop spoonfuls of the batter over the fruit, leaving some gaps to allow steam to escape and for the cobbler topping to spread as it bakes.

Step 8

Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the fruit is bubbling around the edges.

Step 9

Let the cobbler cool slightly before serving. Serve warm on its own or with a scoop of vanilla ice cream for extra indulgence.
