Ingredients

  • 2 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter, melted and slightly cooled
  • 0.75 cups milk
  • 1 teaspoons vanilla extract
  • 1 pieces large egg
  • 1.5 cups fresh blueberries (or frozen, thawed and patted dry)
  • 2 tablespoons optional: coarse sugar for topping

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups with non-stick spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Step 3

In a separate medium-sized bowl, whisk together the melted butter, milk, vanilla extract, and the egg until smooth and fully incorporated.

Step 4

Create a well in the center of the dry ingredients and pour the wet mixture into it. Gently fold the wet and dry ingredients together using a spatula or wooden spoon until just combined. Do not overmix; the batter may be lumpy.

Step 5

Carefully fold in the blueberries, being cautious not to overmix and break them, which could turn the batter purple.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 of the way full. Optionally, sprinkle the tops with coarse sugar for a crunchy texture.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with just a few moist crumbs.

Step 8

Remove the muffin tin from the oven and allow the muffins to cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature and enjoy the burst of blueberry goodness!
