Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour
  • 1 cup blueberries (fresh or dried)
  • 0.5 cup honey
  • 0.25 cup unsweetened applesauce
  • 0.25 cup coconut oil (melted)
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.5 cup chopped nuts (optional, e.g., almonds, pecans)
  • 0.25 cup chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

Step 2

In a large mixing bowl, combine the rolled oats, almond flour, ground cinnamon, and salt. Stir until well mixed.

Step 3

Add the honey, unsweetened applesauce, melted coconut oil, and vanilla extract to the dry ingredients. Mix until everything is evenly coated and begins to stick together.

Step 4

Gently fold in the blueberries. If you're using fresh blueberries, be careful not to crush them. Add chopped nuts and/or chocolate chips at this stage if desired.

Step 5

Transfer the mixture into the prepared baking pan. Use the back of a spoon or a spatula to press it down firmly and evenly into the pan.

Step 6

Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the mixture feels set.

Step 7

Remove the pan from the oven and allow it to cool completely at room temperature. Once cooled, transfer the pan to the refrigerator and chill for at least 1 hour to firm up.

Step 8

Using the parchment paper overhang, lift the granola slab out of the pan and place it on a cutting board. Cut it into 12 bars or your desired size.

Step 9

Store the granola bars in an airtight container for up to 1 week at room temperature or refrigerate for longer shelf life.
