Ingredients

  • 1.25 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 0.25 teaspoons Salt
  • 0.5 cups Unsalted butter, cold and cubed
  • 3 tablespoons Cold water
  • 8 ounces Soft goat cheese (chèvre)
  • 4 ounces Cream cheese, softened
  • 3 tablespoons Honey
  • 1 teaspoon Vanilla extract
  • 2 cups Fresh blueberries
  • 1 tablespoon Lemon juice
  • 1 teaspoon Cornstarch
  • 2 tablespoons Water
  • 1 tablespoon Powdered sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

To make the crust, combine flour, sugar, and salt in a large bowl. Cut in the cold, cubed butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

Step 3

Add cold water, one tablespoon at a time, mixing gently until the dough comes together. Do not overmix.

Step 4

Form the dough into a disc, wrap it in plastic wrap, and refrigerate for 15 minutes.

Step 5

Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan. Transfer the dough to the pan and trim the edges. Prick the bottom of the crust with a fork.

Step 6

Line the crust with parchment paper and fill it with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment and bake for another 10 minutes until lightly golden. Set aside to cool.

Step 7

In a medium bowl, prepare the filling by beating together goat cheese, cream cheese, honey, and vanilla extract until smooth and creamy.

Step 8

Spread the cheese mixture evenly into the cooled crust.

Step 9

In a small saucepan, combine fresh blueberries, lemon juice, cornstarch, and 2 tablespoons of water. Cook over medium heat, stirring frequently, until the mixture thickens and begins to bubble, about 5 minutes.

Step 10

Let the blueberry mixture cool slightly, then spoon it over the cheese filling, spreading evenly.

Step 11

Refrigerate the tart for at least 1 hour to set.

Step 12

Before serving, optionally dust the top with powdered sugar for garnish. Slice and enjoy!
