  • 50 grams granulated sugar
  • 1 tablespoon lemon juice
  • 240 milliliters heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 3 leaves fresh mint leaves (optional, for garnish)

Directions

Step 1

Rinse and pat dry the blueberries. Reserve a small handful (about 50 grams) of blueberries for garnish.

In a medium saucepan, combine the remaining blueberries, granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally, for 7–10 minutes or until the blueberries break down and create a thick, syrupy compote.

Remove the blueberry compote from heat and set it aside to cool completely to room temperature.

In a large mixing bowl, pour the heavy whipping cream. Add the powdered sugar and vanilla extract.
