  • 60 grams Unsalted butter

Directions

Step 1

In a medium saucepan, combine the fresh blueberries and lemon juice. Cook over medium heat for about 5 minutes, stirring occasionally, until the blueberries break down and release their juices.

Remove the saucepan from the heat and strain the mixture through a fine-mesh sieve into a bowl, pressing the solids with a spoon to extract as much juice as possible. Discard the solids.
