Ingredients

  • 1 cup All-purpose flour
  • 1 cup Old-fashioned oats
  • 0.5 cup Brown sugar, packed
  • 0.25 cup Granulated sugar
  • 0.5 cup Unsalted butter, melted
  • 8 ounces Cream cheese, softened
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1.5 cups Blueberries, fresh or frozen
  • 1 tablespoon Cornstarch
  • 1 teaspoon Lemon juice

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving a slight overhang for easy removal later.

Step 2

In a medium mixing bowl, combine the all-purpose flour, old-fashioned oats, and brown sugar. Pour in the melted butter and mix until the mixture resembles coarse crumbs.

Reserve 3/4 cup of the oat mixture for topping. Press the remaining oat mixture firmly into the bottom of the prepared pan to create the crust. Bake the crust in the preheated oven for 10 minutes, then set aside to cool slightly.

In another bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Beat in the egg and vanilla extract until fully combined. Pour the cream cheese mixture over the slightly cooled crust, spreading it evenly.
