Ingredients

  • 115 grams Unsalted butter, softened
  • 100 grams Granulated sugar
  • 50 grams Light brown sugar, packed
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 190 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 150 grams Fresh blueberries
  • 75 grams White chocolate chips (optional)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, cream the softened butter, granulated sugar, and light brown sugar together using an electric hand mixer or a stand mixer until light and fluffy, about 2-3 minutes.

Step 3

Add the egg and vanilla extract to the bowl and mix until well combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.

Step 6

Gently fold in the fresh blueberries using a spatula. If desired, fold in the white chocolate chips for added sweetness.

Step 7

Using a cookie scoop or two spoons, drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers look set. Do not overbake!

Step 9

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Enjoy your soft and chewy blueberry cookies with a glass of milk or a cup of tea!
