Ingredients

  • 300 grams Fresh blueberries
  • 250 ml Heavy cream
  • 50 grams Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Lemon juice
  • 1 teaspoon Cornstarch
  • 2 tablespoons Cold water
  • 5 leaves Fresh mint leaves (optional, for garnish)

Directions

Step 1

In a small saucepan, combine 200 grams of fresh blueberries, lemon juice, and 25 grams of powdered sugar. Cook over medium heat, stirring frequently, until the blueberries release their juices and become soft (approximately 5 minutes).

Step 2

In a small bowl, whisk together the cornstarch and cold water until fully dissolved. Slowly pour this mixture into the saucepan with the blueberries, stirring constantly to thicken. Cook for another 2 minutes until the mixture has a jam-like consistency, then set aside to cool to room temperature.

Step 3

In a large mixing bowl, add the heavy cream, remaining 25 grams of powdered sugar, and the vanilla extract. Use a hand mixer or stand mixer to whip the cream on medium-high speed until soft peaks form. Be careful not to overwhip.

Step 4

Gently fold the cooled blueberry mixture into the whipped cream, creating a marbled effect. Do not overmix; you want swirls of blueberry throughout the cream.

Step 5

Divide the mixture evenly into four dessert glasses or bowls. Top each serving with a few fresh blueberries (from the remaining 100 grams) and garnish with a mint leaf, if desired.

Step 6

Chill the dessert in the refrigerator for at least 1 hour before serving to let the flavors meld and ensure a light, creamy texture. Serve cold and enjoy your Blueberry Cloud!
