Ingredients

  • 8 ounces Cream cheese
  • 0.5 cup Greek yogurt
  • 0.333 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh blueberries
  • 1 tablespoon Lemon juice
  • 0.5 cup Graham cracker crumbs
  • 2 tablespoons Melted butter

Directions

Step 1

In a mixing bowl, combine the cream cheese, Greek yogurt, granulated sugar, and vanilla extract. Beat until the mixture is smooth and creamy.

Step 2

In a blender or food processor, puree the fresh blueberries with the lemon juice until smooth.

Step 3

Fold the blueberry puree into the cream cheese mixture gently, creating a swirled effect if desired.

Step 4

In another bowl, mix the graham cracker crumbs with the melted butter until the crumbs are evenly coated.

Step 5

Spoon a small amount of the graham cracker mixture into the bottom of each popsicle mold, pressing down gently to create a crust layer.

Step 6

Fill the molds with the blueberry cheesecake mixture, leaving a small gap at the top.

Step 7

Insert popsicle sticks into the molds and gently tap the molds on the counter to remove any air bubbles.

Step 8

Freeze the pops for at least 6 hours, or until completely firm.

Step 9

To remove the pops, run warm water over the outside of the molds for a few seconds to loosen them. Serve immediately and enjoy!
