Ingredients

  • 2 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter (cold, cubed)
  • 0.75 cups Buttermilk (cold)
  • 1 cup Fresh blueberries
  • 2 tablespoons Heavy cream (for brushing tops)
  • 1 tablespoon Coarse sugar (optional, for sprinkling on top)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Step 3

Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

Step 4

Gently fold in the cold buttermilk using a spatula until the dough just comes together. Do not overmix.

Step 5

Carefully fold in the fresh blueberries, taking care not to crush them too much.

Step 6

Turn the dough out onto a lightly floured surface and pat it into a rectangle about 1 inch thick.

Step 7

Using a floured biscuit cutter or a glass, cut out biscuits and place them on the prepared baking sheet. Gather the scraps, re-pat, and cut more biscuits until the dough is used up.

Step 8

Brush the tops of the biscuits with heavy cream and sprinkle with coarse sugar, if desired.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.

Step 10

Remove from the oven and allow the biscuits to cool slightly on the baking sheet before serving. Enjoy warm!
