Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 0.5 cup light brown sugar
  • 0.25 cup granulated sugar
  • 0.75 cup unsalted butter
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2 cups blueberries
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat your oven to 375°F (190°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easier removal.

Step 2

In a large mixing bowl, combine the rolled oats, all-purpose flour, light brown sugar, granulated sugar, salt, and baking powder.

Step 3

Melt the unsalted butter and pour it into the bowl. Add the vanilla extract, and mix until the ingredients form a crumbly dough.

Step 4

Take about 2/3 of the dough and press it firmly and evenly into the bottom of your prepared baking pan to form the crust.

Step 5

In a medium bowl, toss the blueberries with cornstarch and lemon juice until evenly coated.

Spread the blueberry mixture evenly over the crust in the baking pan.

Step 7

Sprinkle the remaining 1/3 of the dough over the blueberries, gently pressing it down slightly.

Step 8

Place the pan in the preheated oven and bake for 35–40 minutes, or until the top is golden brown and the blueberries are bubbling.

Step 9

Remove the pan from the oven and let it cool completely in the pan. Then use the parchment paper overhang to lift out the bars before slicing them into 12 pieces.

Store the bars in an airtight container at room temperature for up to 3 days or freeze for longer storage.
