Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 1 teaspoons ground cinnamon
  • 2 medium ripe bananas, mashed
  • 0.75 cups granulated sugar
  • 0.25 cups brown sugar, packed
  • 0.5 cups unsalted butter, melted
  • 0.25 cups milk
  • 1 piece large egg
  • 1 teaspoons vanilla extract
  • 1 cups fresh blueberries
  • 0.5 cups chopped walnuts (or your preferred nuts)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease it with cooking spray.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

Step 3

In a large mixing bowl, mash the ripe bananas until mostly smooth. Add the granulated sugar, brown sugar, melted butter, milk, egg, and vanilla extract. Whisk until fully combined.

Step 4

Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix; the batter should be slightly lumpy.

Step 5

Gently fold in the fresh blueberries and chopped walnuts using a rubber spatula, being careful not to crush the berries.

Step 6

Evenly divide the batter among the 12 muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffin tin from the oven and let the muffins cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Enjoy your Blueberry Banana Nut Muffins warm or at room temperature!
