Ingredients

  • 150 grams all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 0.25 teaspoons salt
  • 1 large egg
  • 180 milliliters milk
  • 1 tablespoons unsalted butter (melted)
  • 1 teaspoon lemon zest
  • 100 grams blueberries
  • 1 tablespoon butter or oil for greasing
  • 1 tablespoon powdered sugar (optional, for garnish)
  • 2 wedges lemon wedges (optional, for serving)

Directions

Step 1

In a large mixing bowl, sift together the all-purpose flour, baking powder, sugar, and salt.

Step 2

In a separate bowl or large measuring jug, whisk the egg with the milk, melted butter, and lemon zest until combined.

Step 3

Pour the wet ingredients into the bowl of dry ingredients and gently mix until just combined. The batter should be smooth, but avoid over-mixing as it could make the pikelets tough.

Step 4

Gently fold in the blueberries, being careful not to crush them.

Step 5

Heat a non-stick frying pan or griddle over medium heat and lightly grease with butter or oil.

Step 6

Spoon approximately 2 tablespoons of batter onto the pan for each pikelet, leaving enough space for them to spread slightly.

Step 7

Cook for 1-2 minutes, or until bubbles form on the surface of the batter and the edges begin to set. Flip each pikelet carefully and cook for an additional 1-2 minutes until golden-brown and cooked through.

Step 8

Transfer the cooked pikelets to a plate and keep warm while repeating with the remaining batter.

Step 9

Dust with powdered sugar if desired and serve warm with lemon wedges on the side for an extra citrusy kick.
