Ingredients

  • 150 grams Blueberries
  • 2 medium Apples
  • 4 tablespoons Granulated sugar
  • 250 milliliters Heavy cream
  • 1 teaspoon Vanilla extract
  • 3 large Egg yolks
  • 4 tablespoons Brown sugar
  • 1 teaspoon Unsalted butter

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Grease four individual ramekins lightly with unsalted butter and set aside.

Step 3

Peel, core, and dice the apples into small cubes.

Step 4

In a small saucepan over medium heat, combine the diced apples and 2 tablespoons of granulated sugar. Cook for 5–7 minutes until the apples are softened but still hold their shape.

Step 5

Divide the cooked apples evenly among the prepared ramekins and top with the fresh blueberries.

Step 6

In a medium saucepan, heat the heavy cream over low heat until it is warm but not boiling. Remove from heat.

Step 7

In a mixing bowl, whisk together the egg yolks, vanilla extract, and remaining 2 tablespoons of granulated sugar until smooth.

Step 8

Slowly pour the warm cream into the egg mixture while whisking constantly to temper the eggs and avoid curdling.

Step 9

Pour the custard mixture evenly over the fruit in the ramekins.

Step 10

Place the ramekins in a deep baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.

Step 11

Carefully transfer the baking dish to the oven and bake for 20–25 minutes, or until the custard is set but still slightly wobbly in the center.

Step 12

Remove the ramekins from the water bath and let cool to room temperature, then refrigerate for at least 2 hours (or overnight for best results).

Step 13

When ready to serve, sprinkle 1 tablespoon of brown sugar evenly over the top of each ramekin.

Step 14

Use a kitchen blowtorch to caramelize the sugar until it forms a crisp, golden-brown layer. If you don’t have a blowtorch, place the ramekins under a hot grill (broiler) for 1–2 minutes, watching closely to ensure the sugar doesn’t burn.

Step 15

Let the caramelized sugar cool for 1–2 minutes before serving to allow it to harden. Enjoy your Blueberry and Apple Brulee!
