  • 12 large Sea scallops
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 2 cloves Garlic
  • 2 sprigs Fresh thyme
  • 2 tablespoons Lemon juice
  • 1 cup Blueberries
  • 0.25 cup Heavy cream
  • 1 tablespoon Honey
  • 1 tablespoon Fresh parsley

Directions

Step 1

Pat the scallops dry with paper towels to remove excess moisture. Season both sides with salt and black pepper.

Heat a large skillet over medium-high heat and add the olive oil. Once the oil is shimmering, place the scallops in the skillet, making sure they are not touching each other.
