Ingredients

  • 200 grams Graham cracker crumbs
  • 100 grams Unsalted butter, melted
  • 450 grams Cream cheese, softened
  • 150 grams Blue cheese, crumbled
  • 150 grams Granulated sugar
  • 120 grams Sour cream
  • 120 milliliters Heavy cream
  • 1 teaspoon Vanilla extract
  • 3 pieces Large eggs
  • 2 tablespoons Honey (optional, for topping)
  • 50 grams Chopped walnuts or pecans (optional, for topping)

Directions

Step 1

Preheat your oven to 160°C (320°F). Prepare a 9-inch (23 cm) springform pan by greasing it lightly or lining the bottom with parchment paper.

Step 2

In a mixing bowl, combine the graham cracker crumbs and melted butter until the mixture resembles wet sand.

Step 3

Press the crumb mixture evenly into the bottom of the springform pan to form the crust. Use the back of a spoon or a flat-bottomed glass to compact it. Set aside.

Step 4

Using a stand mixer or hand mixer, beat the softened cream cheese and blue cheese together on medium speed until smooth and creamy.

Step 5

Add the granulated sugar, sour cream, heavy cream, and vanilla extract to the mixture. Beat until fully combined, scraping down the sides of the bowl as needed.

Step 6

Add the eggs one at a time, mixing on low speed after each addition until just incorporated. Be careful not to overmix to avoid adding too much air.

Step 7

Pour the batter over the prepared crust, smoothing the top with a spatula if needed.

Step 8

Place the springform pan on a baking sheet to catch any potential drips. Bake in the preheated oven for 65-75 minutes, or until the edges are set and the center has a slight wobble when gently shaken.

Step 9

Turn off the oven and crack the door open slightly to allow the cheesecake to cool gradually for about an hour. This helps prevent cracking.

Step 10

Once cooled, refrigerate the cheesecake for at least 4 hours, or ideally overnight, to fully set.

Step 11

Before serving, optionally drizzle honey over the top and sprinkle with chopped nuts for added texture and flavor.

Step 12

Slice and enjoy your rich, creamy Blue Cheesecake!
