  • 12 oz Pasta (such as penne or fusilli)
  • 8 slices Bacon
  • 2 cups Cherry tomatoes, halved
  • 2 cups Arugula or baby spinach

  • 2 tbsp Olive oil
  • 1 cup Parmesan cheese, grated
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Optional: red pepper flakes

Directions

Step 1

Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining and set the pasta aside.

In a large skillet, cook the bacon over medium heat until crispy. Transfer the cooked bacon to a paper towel-lined plate to drain, then crumble into bite-sized pieces.

Drain the bacon fat from the skillet, leaving about 1 tablespoon behind. Add the olive oil to the skillet and heat over medium heat.

Add the minced garlic and cook for 30 seconds, stirring frequently, until fragrant.
