Ingredients

  • 6 slices Bacon
  • 1.5 cups Cherry tomatoes
  • 2 cups Baby spinach
  • 8 large Eggs
  • 0.5 cups Whole milk
  • 1 cup Shredded cheddar cheese
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 stalks Green onion
  • 1 teaspoons Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x9-inch baking dish with olive oil or cooking spray.

Step 2

In a medium skillet, cook the bacon over medium heat until crispy. Transfer to a plate lined with paper towels to drain, then crumble or chop into small pieces.

Step 3

Using the same skillet, pour out excess bacon grease, leaving about 1 teaspoon. Add the cherry tomatoes to the skillet and sauté for 2-3 minutes until they begin to soften and release their juices. Remove from heat.
