Ingredients

  • 20 pieces cherry tomatoes
  • 4 tablespoons mayonnaise
  • 5 pieces bacon strips
  • 4 leaves romaine lettuce
  • 1 stalk green onion
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons garlic powder

Directions

Step 1

Cook the bacon strips in a skillet over medium heat until crispy. Transfer to a plate lined with paper towels to drain excess grease and allow to cool. Once cooled, crumble into small pieces.

Step 2

Cut the tops off the cherry tomatoes and scoop out the seeds and pulp using a small spoon or melon baller. Be careful not to pierce the sides or bottom. Place the hollowed tomatoes upside down on a paper towel to drain while preparing the filling.

Step 3

Finely chop the romaine lettuce and green onion, then combine them in a mixing bowl.

Step 4

Add the mayonnaise, crumbled bacon, salt, black pepper, and garlic powder to the bowl with the lettuce and green onion. Mix well to create the filling.

Turn the cherry tomatoes upright and carefully spoon the filling into each tomato, pressing gently to ensure they are packed but avoiding overfilling.
