Ingredients

  • 500 grams Swiss chard
  • 500 grams Potatoes
  • 3 pieces Garlic cloves
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 1 liter Water

Directions

Step 1

Wash the Swiss chard thoroughly under cold running water to remove any grit. Separate the stems from the leaves and chop both into bite-sized pieces, keeping them separate as the stems require longer cooking.

Step 2

Peel the potatoes and cut them into medium-sized chunks, roughly 2-3 cm in size.

Step 3

Bring 1 liter of water to a boil in a large pot. Add 1 teaspoon of salt to the water.

Step 4

Add the potatoes to the boiling water and cook for about 15 minutes, or until they are fork-tender but not falling apart.

Step 5

While the potatoes are cooking, finely chop the garlic cloves and set them aside.

Step 6

Once the potatoes have cooked, add the Swiss chard stems to the pot. Allow them to cook for 5 minutes.

Step 7

After 5 minutes, add the Swiss chard leaves to the pot. Cook everything together for another 2-3 minutes until the leaves are wilted but still bright green.

Step 8

Drain the potatoes and Swiss chard in a colander, ensuring all the water is removed.

Step 9

In the same pot, heat 3 tablespoons of olive oil over medium heat. Add the chopped garlic and sauté for about 30 seconds, or until fragrant. Be careful not to burn the garlic.

Step 10

Return the drained Swiss chard and potatoes to the pot. Gently toss everything together to coat with the garlicky olive oil.

Step 11

Season with freshly ground pepper and adjust salt to taste, if needed.

Step 12

Serve Blitva warm as a side dish with grilled fish, roasted meats, or as part of a vegetarian meal.
