Ingredients

  • 4 medium (about 800g total) Russet potatoes
  • 2 tablespoons Unsalted butter
  • 0.25 cup Milk
  • 2 large Eggs
  • 0.33 cup All-purpose flour
  • 0.25 cup Parmesan cheese, grated
  • 0.5 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 cups Vegetable oil (for frying)
  • 1 tablespoon Chopped fresh parsley (optional, for garnish)

Directions

Step 1

Peel the Russet potatoes and chop them into large chunks.

Step 2

Place the potatoes in a large pot of salted water and bring to a boil. Cook for 15-20 minutes until tender and easily pierced with a fork.

Step 3

Drain the potatoes thoroughly and transfer them to a large mixing bowl. Mash them until smooth using a potato masher or ricer.

Step 4

Stir in the butter, milk, and 1/2 teaspoon of salt. Mix until creamy and smooth. Let the mixture cool slightly.

Step 5

Beat the eggs in a small bowl, then add them to the mashed potatoes. Stir gently to combine.

Step 6

Add the flour, Parmesan cheese, garlic powder, black pepper, and the remaining 1/2 teaspoon of salt. Mix well until a thick, sticky dough forms.

Step 7

Heat the vegetable oil in a deep skillet or pot over medium heat, ensuring the oil reaches about 350°F (175°C).

Step 8

Using a spoon (or a small cookie scoop), scoop small portions of the potato mixture and gently drop them into the hot oil. Fry in batches to avoid overcrowding.

Step 9

Cook the puffs for 3-4 minutes, turning occasionally, until golden brown and crispy on all sides.

Step 10

Use a slotted spoon to transfer the fried puffs to a plate lined with paper towels to drain excess oil.

Step 11

Repeat the frying process until all the potato mixture is used up.

Step 12

Serve warm, optionally garnished with fresh parsley, and enjoy your Blissful Potato Puffs!
