Ingredients

  • 150 grams Blue cheese
  • 100 grams Cream cheese
  • 20 grams Unsalted butter
  • 100 grams Pecans
  • 15 grams Fresh parsley
  • 15 milliliters Honey
  • 1 teaspoons Cracked black pepper
  • 0.5 teaspoons Salt

Directions

Step 1

Toast the pecans in a dry skillet over medium heat for about 3-5 minutes, stirring constantly, until fragrant and slightly golden. Remove from heat, let cool, and finely chop them.

Step 2

Finely chop the fresh parsley and set aside for garnishing the truffles later.

Step 3

In a medium mixing bowl, combine the blue cheese, cream cheese, and unsalted butter. Use a fork or handheld mixer to blend the ingredients into a smooth and creamy mixture.

Step 4

Add the honey, cracked black pepper, and salt to the cheese mixture. Stir well to evenly distribute the seasonings.

Step 5

Using a small spoon or melon baller, scoop out small portions of the cheese mixture and roll them into bite-sized balls. You should end up with about 12 truffles depending on size.

Step 6

Roll each truffle in the chopped pecans, pressing gently to coat the exterior. For added color and flavor, roll the truffles in the chopped parsley as well or sprinkle it on top.

Step 7

Place the finished truffles on a parchment-lined tray. Chill them in the refrigerator for at least 1 hour to allow the flavors to meld and the texture to firm up.

Step 8

Serve the Bleu Shew Truffles chilled or at room temperature as an appetizer or a delightful addition to a cheese board.
