Ingredients

  • 1 sheet puff pastry sheet
  • 100 grams blue cheese
  • 2 medium onions
  • 2 tablespoons butter
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves
  • 1 large egg
  • 1 tablespoon water
  • 1 tablespoon all-purpose flour
  • 1 pinch salt
  • 1 pinch black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Thinly slice the onions. Heat a skillet over medium heat and melt the butter. Add the onions and a pinch of salt to the skillet and sauté for 15 minutes, stirring occasionally, until the onions are golden and caramelized. Set aside to cool.

Step 3

Lightly flour your work surface and roll out the puff pastry sheet into a rectangle, approximately 10x12 inches.

Step 4

Crumble the blue cheese evenly over the puff pastry, leaving a 1/2-inch border along the edges.

Step 5

Spread the cooled caramelized onions over the blue cheese layer. Drizzle the honey evenly on top and sprinkle with fresh thyme leaves and a pinch of black pepper.

Step 6

Starting from one of the longer edges, carefully roll the puff pastry into a tight log. Pinch the seam gently to seal.

Step 7

Wrap the log in plastic wrap and refrigerate for 10–15 minutes to firm up the dough, making it easier to slice.

Step 8

In a small bowl, whisk together the egg and water to create an egg wash.

Step 9

Remove the chilled pastry log from the refrigerator, and use a sharp knife to slice it into 1/2-inch thick swirls. Place the swirls onto the prepared baking sheet, spacing them about 2 inches apart.

Step 10

Brush the top of each swirl with the egg wash.

Step 11

Bake in the preheated oven for 20–25 minutes, or until the pastry is golden brown and puffed.

Step 12

Remove the swirls from the oven and let them cool slightly before serving. Enjoy them warm or at room temperature.
