Ingredients

  • 2 sheets Frozen puff pastry sheets
  • 2 cups Fresh spinach
  • 3 oz Bleu cheese crumbles
  • 4 oz Cream cheese
  • 1 clove Garlic
  • 1 tbsp Butter
  • 1 large Egg
  • 1 tbsp Water
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Flour (for dusting)

Directions

Step 1

Thaw the puff pastry sheets at room temperature for about 30 minutes or until pliable.

Step 2

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 3

In a skillet, melt the butter over medium heat. Mince the garlic and sauté it for 1-2 minutes until fragrant.

Step 4

Add the fresh spinach to the skillet and cook for 2-3 minutes until wilted. Remove the skillet from heat and let the spinach cool slightly.

Step 5

In a mixing bowl, combine the cooked spinach, bleu cheese crumbles, cream cheese, salt, and black pepper. Mix until well blended.

Step 6

Lightly dust a clean work surface with flour. Roll out each puff pastry sheet slightly to eliminate creases, then cut each sheet into 9 equal squares (18 squares total).

Step 7

Spoon about 1 tablespoon of the spinach and cheese mixture into the center of each square.

Step 8

Fold each square diagonally to form a triangle, then press the edges together with a fork to seal. Be sure the filling is enclosed.

Step 9

In a small bowl, whisk together the egg and 1 tablespoon of water to make an egg wash. Brush the egg wash lightly over the tops of the puffs.

Step 10

Arrange the puffs on the prepared baking sheet, leaving about 1 inch of space between each.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the puffs are golden brown and flaky.

Step 12

Allow the puffs to cool for 5 minutes before serving. Enjoy warm!
