Ingredients

  • 1.5 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.25 teaspoons Salt
  • 1 tablespoon Granulated sugar
  • 1.25 cups Milk
  • 1 Egg
  • 2 tablespoons Unsalted butter (melted)
  • 1 teaspoon Vanilla extract

Directions

Step 1

In a blender, combine the milk, egg, melted butter, and vanilla extract. Blend on low for 5–10 seconds until mixed.

Step 2

Add the all-purpose flour, baking powder, salt, and sugar to the blender. Pulse a few times, then blend on medium speed for about 15–20 seconds until the batter is smooth. Scrape down the sides if needed to incorporate all the ingredients.

Step 3

Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or non-stick cooking spray.

Step 4

Pour batter directly from the blender onto the skillet to form pancakes of your desired size. Leave space between pancakes for easier flipping.

Step 5

Cook for 2–3 minutes, or until bubbles form on the surface and the edges look set. Flip the pancakes with a spatula and cook for an additional 1–2 minutes until golden brown.

Step 6

Remove the cooked pancakes from the skillet and keep warm. Repeat with the remaining batter.

Step 7

Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
