Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Paprika
  • 1 tablespoon Onion powder
  • 1 tablespoon Garlic powder
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 4 tablespoons Butter
  • 1 tablespoon Olive oil

Directions

Step 1

Place the chicken breasts on a cutting board and cover them with plastic wrap. Using a meat mallet or rolling pin, pound the chicken until it's about 1/2 inch thick for even cooking.

Step 2

In a small bowl, combine paprika, onion powder, garlic powder, black pepper, cayenne pepper, thyme, oregano, and salt. Mix well to create the blackening spice blend.

Step 3

Sprinkle the spice blend generously on both sides of each chicken breast, pressing the mixture into the meat as evenly as possible.

Step 4

In a large skillet, heat 2 tablespoons of butter and olive oil over high heat until the butter is melted and sizzling hot but not smoking.

Step 5

Carefully place the chicken breasts in the hot skillet. Cook for about 3-4 minutes per side or until the outside is nicely charred and the chicken is cooked through. Add the remaining butter as needed to keep the chicken moist and flavorful while maintaining the high heat.

Step 6

Once cooked, remove the chicken from the skillet and let it rest for a few minutes so the juices can redistribute.

Step 7

Serve the blackened chicken hot, with your choice of sides, such as rice, vegetables, or a fresh salad.
