Ingredients

  • 300 grams Blackberries
  • 2 large Apples
  • 100 grams Granulated sugar
  • 125 grams Unsalted butter
  • 125 grams Self-raising flour
  • 125 grams Caster sugar
  • 2 large Eggs
  • 2 tablespoons Milk
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 180°C (160°C fan)/350°F/gas mark 4. Grease a medium-sized baking dish and set it aside.

Step 2

Peel, core, and slice the apples into thin wedges. Place them in the baking dish along with the blackberries.

Step 3

Sprinkle the granulated sugar evenly over the fruit and gently mix to coat. Set this aside while you prepare the pudding batter.

Step 4

In a mixing bowl, cream together the softened unsalted butter and caster sugar until light and fluffy using an electric mixer or a wooden spoon.

Step 5

Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Step 6

Sift the self-raising flour into the bowl, then fold it gently into the wet ingredients using a spatula or wooden spoon.

Step 7

Add the milk to the batter and mix until the mixture has a smooth, dropping consistency.

Step 8

Using a spoon, spread the batter evenly over the fruit layer in the baking dish, making sure to cover the fruit completely.

Step 9

Bake in the preheated oven for 40–45 minutes or until the sponge is golden brown and a skewer inserted into the center comes out clean.

Step 10

Allow the pudding to cool for 5–10 minutes before serving. Serve warm with custard, cream, or a scoop of vanilla ice cream.
