Ingredients

  • 100 grams black sesame seeds
  • 30 grams glutinous rice flour
  • 800 milliliters water
  • 50 grams rock sugar

Directions

Step 1

Begin by washing the black sesame seeds thoroughly. Rinse them several times under cold water until the water runs clear.

Step 2

Drain the sesame seeds and spread them out in a dry frying pan. Toast the seeds over medium-low heat, stirring constantly until they become fragrant and start to pop slightly, around 5-7 minutes. Be careful not to burn them.

Step 3

Allow the toasted sesame seeds to cool slightly, then grind them into a fine powder using a blender or spice grinder. You may need to do this in batches to ensure even grinding.

Step 4

In a small bowl, mix the ground black sesame seeds with the glutinous rice flour until well combined.

Step 5

Transfer the powdered mixture into a pot and add 800 milliliters of water. Stir the mixture until it is well dissolved.

Step 6

Place the pot over medium heat and bring to a boil, stirring regularly to prevent the bottom from burning. Once it starts to boil, reduce the heat to low and add the rock sugar.

Step 7

Continue to simmer the soup until the sugar has completely dissolved and the soup has thickened to your desired consistency, about 10-12 minutes.

Step 8

Taste and adjust the sweetness by adding more sugar if necessary, and serve the soup warm in bowls.
