Ingredients

  • 2 pieces (8 oz each) Ribeye steak (or your preferred cut)
  • 2 teaspoons Coarse black pepper
  • 1 teaspoon Salt
  • 2 tablespoons Honey
  • 1 tablespoon Soy sauce
  • 2 cloves Garlic (minced)
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 1 sprig Fresh rosemary or thyme (optional for garnish)

Directions

Step 1

Take the steaks out of the refrigerator 30 minutes before cooking to let them come to room temperature.

Step 2

Pat the steaks dry with paper towels to ensure a good sear. Season both sides generously with salt and 1 teaspoon of coarse black pepper per steak.

Step 3

In a small bowl, mix the honey, soy sauce, and minced garlic until well combined. Set aside.

Step 4

Heat a large skillet or cast-iron pan over medium-high heat. Once hot, add the olive oil and 1 tablespoon of butter.

Step 5

Carefully place the steaks into the hot pan and sear for 3-4 minutes on one side, without moving them, to develop a golden-brown crust.

Step 6

Flip the steaks and cook for another 3-4 minutes, or until the internal temperature reaches your desired doneness (125°F for rare, 135°F for medium-rare, 145°F for medium). Adjust cooking time accordingly.

Step 7

Reduce the heat to medium-low. Push the steaks to one side of the pan and add the remaining 1 tablespoon butter and the honey-soy-garlic mixture to the other side. Stir the sauce gently as it bubbles and thickens, about 1-2 minutes.

Step 8

Spoon the sauce over the steaks, ensuring they are fully coated. Sprinkle additional black pepper over the top for added flavor.

Step 9

Remove the steaks from the pan and let them rest on a cutting board for 5 minutes to allow the juices to redistribute.

Step 10

Slice the steaks across the grain and serve with an extra drizzle of the pan sauce. Garnish with fresh rosemary or thyme if desired.
