Ingredients

  • 150 g All-purpose flour
  • 50 g Unsweetened cocoa powder
  • 200 g Granulated sugar
  • 1 tsp Baking powder
  • 0.5 tsp Baking soda
  • 0.25 tsp Salt
  • 240 ml Buttermilk
  • 120 ml Vegetable oil
  • 2 Eggs
  • 2 tsp Vanilla extract
  • 120 ml Boiling water
  • 500 g Cherries in syrup
  • 3 tbsp Kirsch (cherry liqueur)
  • 500 ml Heavy whipping cream
  • 50 g Powdered sugar
  • 100 g Chocolate shavings

Directions

Step 1

Preheat the oven to 175°C (350°F). Grease and line three 8-inch (20 cm) round cake pans with parchment paper.

Step 2

In a large mixing bowl, sift and combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.

Gradually add the wet ingredients to the dry ingredients and mix until just combined.

Slowly stir in the boiling water. The batter will be thin; this is normal.

Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

While the cakes cool in the pans for 10 minutes, drain the cherries in syrup, reserving 1/4 cup of the syrup. Mix the syrup with the Kirsch and set aside.
