Ingredients

  • 120 grams All-purpose flour
  • 45 grams Unsweetened cocoa powder
  • 200 grams Granulated sugar
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 2 large Eggs
  • 120 ml Whole milk
  • 60 ml Vegetable oil
  • 1 teaspoon Vanilla extract
  • 120 ml Boiling water
  • 400 grams Canned or jarred cherries in syrup
  • 60 ml Kirsch (cherry brandy)
  • 500 ml Heavy cream
  • 50 grams Powdered sugar
  • 100 grams Dark chocolate

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line the bottoms of two 8-inch (20 cm) round cake pans with parchment paper.

Step 2

In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until the batter is smooth and fully incorporated.

Gradually add the boiling water to the batter, stirring constantly. The batter will be thin, but this is normal.

Divide the batter evenly between the prepared cake pans and bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Press the chocolate shavings onto the sides of the cake and sprinkle some on top. Decorate the top with the remaining cherries and additional whipped cream if desired.

Chill the cake for at least 1 hour before serving to allow the flavors to meld together.
