Ingredients

  • 425 grams (1 can, drained and rinsed) Black beans
  • 0.5 cup, finely chopped Red onion
  • 2 cloves, minced Garlic
  • 1 medium, grated Carrot
  • 0.5 cup Breadcrumbs
  • 0.5 cup Rolled oats
  • 1 tablespoon Ground flaxseed
  • 2 tablespoons Water
  • 2 tablespoons Soy sauce
  • 1.5 teaspoons Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh parsley
  • 1 tablespoon Olive oil

Directions

Step 1

In a small bowl, mix the ground flaxseed and water. Set aside for 5 minutes to allow it to thicken into a flax 'egg'.

Step 2

In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth but still retaining some texture.

Step 3

Add the red onion, garlic, grated carrot, breadcrumbs, rolled oats, soy sauce, cumin, chili powder, smoked paprika, salt, pepper, and parsley to the mashed black beans.

Step 4

Pour the flax 'egg' into the mixture and stir everything together until well combined and the mixture holds together when pressed. If the mix feels too wet, add a small amount of additional breadcrumbs or oats; if too dry, add a splash of water or olive oil.

Step 5

Form the mixture into 4 equal-sized patties, about 1/2-inch thick each.

Step 6

At this stage, the patties can be cooked immediately or refrigerated for up to 24 hours for better texture.

Step 7

To cook, heat the olive oil in a skillet over medium heat. Add the patties and cook for 4-5 minutes per side, until golden brown and heated through. Alternatively, bake the patties in a preheated oven at 375°F (190°C) for 15-20 minutes, flipping halfway through.

Step 8

Serve on burger buns with your favorite toppings and enjoy!
