Ingredients

  • 2 cups Black beans (canned, drained and rinsed)
  • 1 piece Pie crust (store-bought or homemade)
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion (finely diced)
  • 3 cloves Garlic cloves (minced)
  • 1 teaspoon Cumin (ground)
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1.5 cups Cherry tomatoes (halved)
  • 1 cup Grated cheese (cheddar, pepper jack, or your choice)
  • 2 tablespoons Fresh cilantro (chopped, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Roll out the pie crust into a tart pan and gently press to fit. Trim any excess edges and use a fork to prick the bottom to prevent puffing. Bake the crust for 10 minutes, then remove and set aside.
