  • 2 pieces Boneless, skinless chicken breasts
  • 1 can (15 ounces) Black beans, drained and rinsed

  • 1 cup Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 1 cup Sour cream
  • 1 packet (1 ounce) Taco seasoning
  • 2 teaspoons Minced garlic
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh cilantro, chopped (optional)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish with non-stick cooking spray or a little olive oil.

Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and season with salt and black pepper. Cook for 5–6 minutes per side or until golden brown and fully cooked through (internal temperature should reach 165°F/74°C). Remove the chicken from the skillet and set aside to cool slightly.

Once the chicken is cool enough to handle, shred it into bite-sized pieces using two forks.

In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes with green chilies, cooked rice, sour cream, taco seasoning, and minced garlic. Mix until all ingredients are evenly combined.
