Ingredients

  • 2 cups (cooked or 15 oz cans, drained and rinsed) Black beans
  • 2 cups Cooked rice
  • 1 cup Salsa
  • 2 cups Shredded cheddar cheese
  • 4 large Flour tortillas
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 1 tablespoon Olive oil
  • 2 stalks, chopped (for garnish, optional) Green onions
  • 0.5 cup (for serving, optional) Sour cream
  • 2 tablespoons (chopped, optional garnish) Fresh cilantro

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil or cooking spray.

Step 2

In a large mixing bowl, combine the cooked black beans, cooked rice, 1/2 cup of the salsa, cumin, chili powder, garlic powder, and salt. Mix until evenly combined.

Step 3

Spread a thin layer of salsa (about 2 tablespoons) on the bottom of the prepared baking dish to prevent sticking.

Step 4

Lay a flour tortilla flat. Spoon about 3/4 cup of the black bean and rice mixture into the center of the tortilla. Sprinkle 2 tablespoons of shredded cheese on top of the filling.

Step 5

Roll the tortilla tightly around the filling to form a burrito. Place it seam side down in the baking dish. Repeat with the remaining tortillas and filling.

Step 6

Once all the burritos are lined up in the baking dish, pour the remaining salsa evenly over the top. Spread it gently with the back of a spoon to ensure all the burritos are covered.

Step 7

Sprinkle the remaining shredded cheese evenly over the salsa-covered burritos.

Step 8

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

Step 9

Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 10

Remove the dish from the oven and let it cool for 5 minutes. Garnish with chopped green onions and fresh cilantro, if desired.

Step 11

Serve warm with a dollop of sour cream on the side, and enjoy!
