Ingredients

  • 4 pieces flour tortillas
  • 2 cups cooked black beans
  • 1 tablespoon olive oil
  • 1 piece small onion, diced
  • 2 pieces garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.5 cup water
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 0.5 cup salsa
  • 0.25 cup chopped fresh cilantro
  • 1 piece lime, cut into wedges

Directions

Step 1

Heat olive oil in a medium saucepan over medium heat.

Step 2

Add diced onion and sauté for about 5 minutes until softened.

Step 3

Stir in minced garlic, cumin, chili powder, and salt, and cook for another minute until fragrant.

Step 4

Add the cooked black beans and water to the saucepan. Stir to combine, and bring to a simmer.

Step 5

Cook, stirring occasionally, until the mixture thickens slightly, about 10 minutes. Mash some of the beans with the back of the spoon to create a creamy texture.

Step 6

Warm the flour tortillas in a dry skillet for about 30 seconds on each side, or until soft and pliable.

Step 7

Lay each tortilla flat and spread a quarter of the black bean mixture down the center of each.

Step 8

Sprinkle each with shredded cheddar cheese.

Step 9

Add a dollop of sour cream and a couple of tablespoons of salsa on top of the beans and cheese.

Step 10

Sprinkle with chopped cilantro to taste.

Step 11

Fold the sides of the tortilla over the filling and then roll up from the bottom to form a burrito.

Step 12

Serve the burritos warm with lime wedges on the side, allowing diners to add a fresh squeeze of lime juice if desired.
