Ingredients

  • 1 cup couscous
  • 1 cup low-sodium vegetable broth (or water)
  • 1 cup black beans, rinsed and drained
  • 1 medium red bell pepper, diced
  • 1 small cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 0.25 cup red onion, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • 3 tablespoons olive oil
  • 1 medium lime, juiced
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon salt

Directions

Step 1

Add the vegetable broth (or water) to a small saucepan and bring it to a boil over medium-high heat.

Step 2

Once boiling, remove the saucepan from the heat and stir in the couscous. Cover the pan and let it sit for 5 minutes to allow the couscous to absorb the liquid.

Step 3

Fluff the couscous with a fork and let it cool to room temperature while you prepare the other ingredients.

Step 4

In a large mixing bowl, combine the black beans, diced red bell pepper, cucumber, cherry tomatoes, red onion, and chopped cilantro.

Step 5

To make the dressing, whisk together the olive oil, lime juice, ground cumin, salt, and black pepper in a small bowl.

Step 6

Add the cooled couscous to the mixing bowl with the vegetables and beans. Pour the dressing over the ingredients and toss everything together until well combined.

Step 7

Taste and adjust seasoning, adding more salt, pepper, or lime juice if desired.

Step 8

Serve the salad immediately, or refrigerate for at least 30 minutes to allow the flavors to meld together.

Step 9

Garnish with additional cilantro just before serving, if desired.
