Ingredients

  • 4 pieces Flour tortillas (10-inch)
  • 1 can (15 oz), drained and rinsed Black beans
  • 1 cup Fresh corn kernels
  • 1 cup, diced Cherry tomatoes
  • 0.5 cup, finely diced Red onion
  • 0.25 cup, chopped Cilantro
  • 1 whole, juiced Lime
  • 1 small, finely diced Jalapeño pepper (optional)
  • 2 cups Cooked white or brown rice
  • 1 cup, shredded Cheddar cheese
  • 0.5 cup Sour cream
  • 1 large, sliced Avocado
  • 1 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

In a medium bowl, combine the black beans, fresh corn kernels, cherry tomatoes, red onion, cilantro, lime juice, and jalapeño pepper (if using). Mix well to create the salsa.

Drizzle the olive oil over the salsa, then season with salt and black pepper. Mix again and set aside.
