Ingredients

  • 2 pieces Chicken breast, boneless and skinless
  • 2 tablespoons Olive oil

  • 1 teaspoon Chili powder

  • 0.5 teaspoon Salt
  • 1 cup Black beans, canned (rinsed and drained)
  • 0.5 cup Corn kernels, fresh or frozen
  • 8 pieces Small flour or corn tortillas
  • 1 piece Avocado, sliced
  • 2 tablespoons Cilantro, chopped
  • 4 pieces Lime wedges
  • 0 Optional toppings: shredded cheese, sour cream, or hot sauce

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Season the chicken breasts with ground cumin, chili powder, smoked paprika, and salt. Add the chicken breasts to the skillet and cook for 6-7 minutes per side, or until the chicken is fully cooked and juices run clear. Remove the chicken from the skillet and set it aside to rest for 5 minutes.

Add the remaining 1 tablespoon of olive oil to the same skillet over medium heat. Add the minced garlic and cook for 1 minute, stirring frequently to avoid burning.
