Ingredients

  • 4 pieces beef steaks (sirloin or round cut)
  • 3 tablespoons lime juice
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 4 tablespoons vegetable or olive oil
  • 1 large yellow onion, sliced
  • 1 medium green bell pepper, sliced
  • 4 cloves garlic cloves, minced
  • 3 tablespoons tomato paste
  • 0.5 cup dry white wine
  • 1 cup water or beef stock
  • 1 piece bay leaf
  • 0.25 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)

Directions

Step 1

Place the beef steaks in a large bowl and season with lime juice, salt, black pepper, and ground cumin. Let them marinate for 15 minutes while you prepare the other ingredients.

Step 2

In a large, deep skillet or heavy-bottomed pot, heat 2 tablespoons of the oil over medium-high heat. Sear the steaks for about 2 minutes on each side or until browned. Remove from the skillet and set aside.

Step 3

Reduce heat to medium and add the remaining oil to the skillet. Sauté the onions, peppers, and garlic until softened and fragrant, about 5 minutes.

Step 4

Stir in the tomato paste and cook for 1-2 minutes to deepen its flavor.

Step 5

Deglaze the pan by adding the white wine, scraping up any flavorful bits stuck to the bottom of the pan.

Step 6

Add the water or beef stock, bay leaf, and red pepper flakes (if using) to the skillet. Bring the mixture to a simmer.

Step 7

Return the seared steaks to the skillet, nestling them into the sauce. Cover the pan and reduce the heat to low. Simmer gently for 35-40 minutes, or until the steaks are tender and infused with the flavors of the sauce.

Step 8

Taste the sauce and adjust the seasoning with additional salt or black pepper as needed.

Step 9

Remove the bay leaf and garnish with fresh cilantro if desired. Serve hot with white rice, plantains, or crusty bread. Enjoy!
