Ingredients

  • 1.5 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 1.5 teaspoons baking powder
  • 0.25 teaspoons salt
  • 0.5 cups unsalted butter (melted)
  • 0.5 cups milk
  • 1 teaspoons vanilla extract
  • 2 large eggs
  • 1 cups whipping cream
  • 2 tablespoons powdered sugar
  • 0.25 cups rainbow sprinkles
  • 0 as needed gel food coloring (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a muffin or mini cupcake tin with paper liners.

Step 2

In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

Step 3

In a separate bowl, combine the melted butter, milk, vanilla extract, and eggs. Whisk until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

Step 5

If you're using food coloring, divide the batter into separate bowls and mix in a few drops of gel food coloring to create different colors.

Step 6

Spoon the batter evenly into the prepared cupcake liners, filling each about 2/3 full.

Step 7

Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Step 8

While the cakes cool, whip the cream and powdered sugar together in a mixing bowl until soft peaks form.

Step 9

Once the cakes are fully cooled, top each one with a dollop of whipped cream and a sprinkle of rainbow decorations.

Step 10

Serve immediately or store in the refrigerator for up to 2 days.
