  • 200 grams egg noodles
  • 2 large eggs
  • 50 grams parmesan cheese
  • 1 tablespoon olive oil
  • 1 medium bell pepper (diced)
  • 1 medium carrot (grated)
  • 100 grams corn kernels
  • 100 grams cream cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon dried oregano
  • 1 tablespoon fresh parsley (chopped)
  • 50 grams shredded mozzarella

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin lightly with olive oil.

Step 2

Cook the egg noodles according to the package instructions. Drain and let them cool slightly.

Step 3

In a large mixing bowl, combine the cooked noodles, eggs, parmesan cheese, a pinch of salt, and black pepper. Mix well until evenly coated.

Divide the noodle mixture evenly among the muffin cups, shaping them into little ‘nests’ by pressing gently in the middle to create an indent.

Bake the noodle nests in the preheated oven for 10-12 minutes, or until they are golden and hold their shape. Remove and set aside to cool slightly.
