Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 pieces garlic cloves, minced
  • 0.5 cups dry white wine
  • 0.75 cups chicken stock
  • 0.5 cups heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat a large skillet over medium heat and add the olive oil.

Step 2

Season the chicken breasts with salt and black pepper on both sides.

Step 3

Place the chicken breasts in the skillet and cook for 4 to 5 minutes on each side until golden brown. Remove the chicken and set aside.

Step 4

Lower the heat to medium-low and add the butter to the skillet. Once melted, stir in the minced garlic and sauté for 1 minute until fragrant.

Step 5

Deglaze the skillet by adding the white wine. Use a wooden spoon to scrape any browned bits off the bottom of the skillet.

Step 6

Pour in the chicken stock and bring to a gentle boil. Let the liquid reduce by about half, which should take 5 minutes.

Step 7

Stir in the heavy cream, Dijon mustard, and fresh thyme. Simmer the sauce for another 2 minutes until slightly thickened.

Step 8

Return the chicken breasts to the skillet and spoon the sauce over the top. Cover the skillet and cook for 10 to 12 minutes until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).

Step 9

Garnish the dish with fresh parsley before serving. Pair with mashed potatoes, rice, or steamed vegetables for a complete meal.
