Ingredients

  • 2 pieces ribeye steaks (1 1/2-inch thick)
  • 2 tablespoons olive oil
  • 1.5 teaspoons kosher salt
  • 1 teaspoon black pepper, freshly ground
  • 0.5 teaspoon garlic powder
  • 4 tablespoons unsalted butter
  • 2 cloves garlic cloves, minced
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary leaves, chopped

Directions

Step 1

Take the ribeye steaks out of the refrigerator 30 minutes prior to cooking to let them come to room temperature.

Step 2

Preheat the grill to high heat (450-500°F). Make sure the grill grates are clean.

Step 3

Pat the steaks dry with paper towels, then drizzle with olive oil and rub it evenly on all sides.

Step 4

Sprinkle the kosher salt, black pepper, and garlic powder evenly on both sides of the steaks, pressing the seasoning into the meat.

Step 5

Place the steaks on the hot grill and close the lid. Sear for 4-5 minutes on the first side without moving them to create a nice crust.

Step 6

Flip the steaks and grill for an additional 4-5 minutes for medium-rare, or adjust the time for your preferred doneness.

Step 7

While the steaks cook, melt the butter in a small saucepan over medium heat. Add the minced garlic, thyme, and rosemary, stirring for about 1-2 minutes until fragrant. Remove from heat.

Step 8

Remove the steaks from the grill and let them rest on a cutting board for 5-7 minutes, tented loosely with aluminum foil to retain warmth. This allows the juices to redistribute.

Step 9

Brush the steaks generously with the garlic-herb butter before serving.

Step 10

Slice and serve the steaks hot alongside your favorite sides. Enjoy!
