Ingredients

  • 4 whole Dried ancho chili peppers
  • 4 whole Dried guajillo chili peppers
  • 2 whole Dried cayenne peppers
  • 2 tablespoons Ground cumin
  • 1 tablespoon Paprika (preferably smoked)
  • 1 tablespoon Garlic powder
  • 2 teaspoons Dried oregano
  • 0.5 teaspoon Ground cinnamon
  • 1 teaspoon Salt

Directions

Step 1

Place the dried ancho, guajillo, and cayenne peppers in a dry skillet over medium heat. Toast them for 2-3 minutes, turning occasionally, until the peppers are fragrant but not burned.

Step 2

Remove the peppers from the skillet. Let them cool for a minute before using scissors to cut off the stems. Shake out the seeds and discard them as desired (for less heat, remove more seeds).

Step 3

Roughly tear the peppers into smaller pieces and add them to a spice grinder or high-powered blender.

Step 4

Add the ground cumin, paprika, garlic powder, oregano, cinnamon, and salt to the grinder or blender with the pepper pieces.

Step 5

Grind the spices together until they form a fine, uniform powder. This may take 1-2 minutes depending on your grinder.

Step 6

Carefully transfer the chili powder to an airtight container or spice jar for storage.

Step 7

Store the Big Bull Hot Chili Powder in a cool, dry place for up to 6 months. Shake the jar before use to redistribute the spices if needed.

Step 8

Use this chili powder in recipes that call for bold heat and robust flavor. Start with 1-2 teaspoons per dish and adjust to taste.
