Ingredients

  • 200 grams Gram flour (Besan)
  • 2 medium Potatoes
  • 1 medium Onion
  • 2 small Green chili
  • 2 tablespoons Fresh coriander
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Asafoetida (Hing)
  • 1 teaspoon Salt
  • 0.5 teaspoon Baking soda
  • 200 milliliters Water
  • 500 milliliters Oil

Directions

Step 1

Peel the potatoes and slice them thinly (about 1/8 inch thick). Slice the onion thinly and set aside.

Step 2

Finely chop the green chilies and coriander leaves.

Step 3

In a mixing bowl, combine gram flour, cumin seeds, turmeric powder, red chili powder, asafoetida, salt, and baking soda.

Step 4

Gradually add water to the dry mixture, whisking well to create a smooth, lump-free batter. The batter should be thick yet flowy enough to coat the back of a spoon.

Step 5

Add the potato slices, onion, green chilies, and coriander leaves to the batter. Mix well until all slices are coated evenly.

Step 6

Heat oil in a deep frying pan over medium heat. Test the oil temperature by dropping a small portion of the batter. It should sizzle and rise to the surface.

Step 7

Carefully drop a few coated potato and onion slices into the hot oil. Do not overcrowd the pan.

Step 8

Fry the bhajias until they are golden brown and crispy on both sides, turning occasionally, about 5-6 minutes.

Step 9

Remove the fried bhajias with a slotted spoon and place them on a plate lined with paper towels to absorb excess oil.

Step 10

Repeat the frying process with the remaining batter-coated slices.

Step 11

Serve hot with mint yogurt dip or tamarind chutney.
