Ingredients

  • 1 cup Besan (gram flour)
  • 4 cups Water
  • 1 large, finely chopped Onion
  • 1 large, finely chopped Tomato
  • 1 tablespoon Ginger-garlic paste
  • 2 finely chopped Green chilies
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Mustard seeds
  • 1 teaspoon or to taste Salt
  • 2 tablespoons Oil
  • 2 tablespoons, chopped Cilantro

Directions

Step 1

In a medium mixing bowl, add 1 cup of besan and slowly add 2 cups of water while whisking to create a smooth, lump-free batter. Set aside for later.

Step 2

Heat 2 tablespoons of oil in a large pan over medium heat. Add 1 teaspoon of cumin seeds and 0.5 teaspoon of mustard seeds. Let them crackle for a few seconds.

Step 3

Add 1 finely chopped large onion and sauté until translucent, about 5-7 minutes.

Step 4

Add 1 tablespoon of ginger-garlic paste and 2 finely chopped green chilies. Sauté for another 2 minutes until the raw aroma of ginger-garlic paste fades.

Step 5

Add 1 large finely chopped tomato and cook until the tomatoes become soft and oil starts to separate from the tomato-onion mixture.

Step 6

Stir in 0.5 teaspoon of turmeric powder, 0.5 teaspoon of red chili powder, and 1 teaspoon of coriander powder. Mix well and cook for another minute.

Step 7

Gradually add the besan batter to the pan while stirring continuously to avoid lumps.

Once the batter is added, pour in the remaining 2 cups of water and 1 teaspoon of salt or to taste. Mix well.

Step 9

Bring the mixture to a boil, then reduce the heat to low and let it simmer for 10-12 minutes, stirring occasionally until the curry thickens to your desired consistency.

Step 10

Garnish the besan curry with 2 tablespoons of chopped cilantro and serve hot with rice, roti, or naan.
